Brinjal -Aloo Curry Masala
RECIPE:
1.Take 5-6 small Brinjal. Cut each brinjal into 8 small pieces, Immerse them into cold water.
2.Peel 2 medium Potatoes cut them into small cubes.
3.Heat 1 tbsp oil in a pan and mustard seeds, cumin seeds, asafoetida.turmeric powder,red chilli powder and curry leaves.
4.Add potato cubes and soute.Cover and cook for 2-3 min over medium heat.
5.Drain all the water from brinjal cubes and add it to the pan.
6.Cover and cook for 2 min, Add around 1/2 cup water. Mix well and add salt to taste.1tbsp tamarind pulp and 1 tbps Mahalaxmi Goda Masala.
7.Stir nicely,cover and let the potato brinjal cook over medium-low heat.
8.Add little water if needed, Stir occasionally, Once potato and brinjal is cooked, add 1 tbsp jaggery.
9.then add 1/2 tbsp raosted peanuts powder(coarse) and boil for couple of minutes.
10.Spread 1 tbsp finely chopped coriander leaves for garnishing, Serve hot with chapati,bhakari or Roti
